Hey people...
Victoria here,
FOOD GLORIOUS FOOD !
So i thought it was quite time i did a foody blogpost and chocolate chips in things seems to be my favourite type of baked good. And chocolate chip muffins/cupcakes seemed to fit right in. These is my favourite recipe for these muffins. I have tried various recipes for these muffins but this recipe seems to be by far my favourite so lets get to it.
REALLY SORRY FOR THE LOGO OF THE CAMERA APP THAT I USED 'RETRICA' (btw really good camera app great if you need a timer)
ADAPTED FROM:
Link: http://moroccanfood.about.com/od/dessertsandcookies/r/Chocolate-Chip-Cupcake-Recipe.htm for more information on these muffins
This recipe makes 24 large cupcakes and 36 small ones
Ingredients:
1 cup butter, softened
1 1/2 cups sugar
4 large eggs
2 teaspoons vanilla
2 1/2 cups flour
2 teaspoons baking powder
pinch of salt
1 cup milk
200g chocolate chips or finely chopped chocolate. I used dark chocolate because it has a better flavour in cakes better than milk chocolate but which ever you choose its up to you.
Preparation:
1.Preheat your oven to 375° F (190° C).
2.With a whisk or mixer (i used a mixer because its a lot faster and easier), beat the butter and sugar together until light and creamy
3. Add the eggs one at a time, beating well after each egg being cracked in.
4. Stir in the vanilla
5. Combine the flour, baking powder and salt. Add the flour mixture and milk to your egg, butter, sugar and vanilla mixture. Beat until a smooth, thick batter forms. DO NOT OVER MIX
6. Add your chocolate chips/chunks and stir in well so all parts of your batter get chocolate chips/chunks
7. Line your muffin tray with cupcake liners.
8. Spoon or ice-cream scoop your batter until 3/4 full. So basically a half but a little bit more
9. Bake in the oven for 15-17 minutes until set and golden brown.
10. When your cakes are done insert a toothpick in the centre the tooth pick should come out clean. If melted chocolate comes out on the toothpick thats okay its just the chocolate chips that are melted but no batter should appear on the toothpick
11. If baked throughly places your cakes on your cooling rack and allow to cool completely
Side note: I like to keep my cupcakes in the fridge for a bit until the chocolate chips have hardened because then theres a slight crunch to them lol.
Store the cupcakes in an airtight container at room temperature for several days, or for longer in the freezer.
If you do make these cupcakes please share your recreations on twitter or instagram using the hashtag #vickybakes :)
